Team Recipe – Tuna or Chicken Stuffed Peppers
I love stuffed peppers, but they can be quite cumbersome to make. I find a traditional pepper stuffing very heavy to make, so I decided to play around with various stuffing methods that I could use without having to spend the time to cook it. Thus was formed my tuna or chicken stuffed peppers recipe. This one is really easy and can be made within 10 minutes or less. It works well for packing in a lunch, or eating a healthy meal on the go.
Ingredients:
- 3 peppers (to be stuffed)
- 2 cans of tuna or 2 cups of shredded chicken
- 1 small onion
- ½ green pepper chopped
- ½ small apple chopped
- ¼ cup of peas
- 2 tsp. of Greek yogurt
- 1 avocado
- 2 dashes of garlic powder
- 2 hard-boiled eggs
- Any other crunchy veggies you like, chopped
Directions:
- Wash the 3 peppers. Chop them in half down the center, and set aside to be stuffed.
- In a bowl, combine the remaining ingredients
- Take the mixed ingredients and fill each of the half pepper shells
- Enjoy!
